Feta Chicken dish…

I spent most of the day today reviewing Paul’s IDI PPD. Tedious. But I felt good when it was done. Value add.

We had book club lunch today, and I missed Sharon, who was on vacation with Joe at the Biltmore House. It must be their anniversary or something. Suzanne told the story about the incredible letter written by a father to his son at a wrestling potluck. She got all emotional again just telling it. She also had “dark pretzels” for all of us to sample.

The Irvine ISO education went fairly decently. Other than the e-meeting being an hour off (presumably due to the EDT switch), which I was able to reset to 12:30, there were no technology glitches at least.

I made the first of the WW recipes, the Feta Chicken dish, and overall I would have to say that I’m not sure it was worth the bother. However, the more I ate of it, the better it tasted, and I’m glad it made 3 servings and I have 2 more to eat during the rest of the week. I think if I made it again, it would be less trouble. I should have done some things in a different order, the recipe wasn’t good at that.

After eating, and cleaning up, I did a little prep for tomorrow night’s recipe. I chopped up an onion, and I put four slices of whole wheat bread in the food processor to make bread crumbs for the meatloaf. So, tomorrow, I just have to saute the onions, and then mix all the ingredients together and bake.

I got to bed at 9:00 tonight, and read (homework for tomorrow’s class) until 9:30 or so. I was asleep by 10.
